Where I live, instead of using fruit of the palm tree, we could use prickly pear cactus fruit. In the Spanish language the cactus fruit it is known as "tuna" (an English word for a fish with red flesh). In latin, the cactus fruit is known as Opuntia. The English word means, "a pear with thorns". The fruit must be peeled to remove the thorns and spines. I have eaten the prickly pear cactus fruit raw, but I have never eaten the fruit dried. I am speculating about drying the fruit of the prickly pear cactus, and then cooking it with oil, and mashing the dried fruit.

Thank you for your video. Before watching your video, I thought that عجوه meant dried dates and that َمَر also meant dried dates. However, perhaps Ajwa is a very special variety of date and tamar is a different date. Then again, maybe tamar is tamarind (Tamarindus indica). Or perhaps, if you add water and oil and cook the Tamarindus indica inside of a metal pan, then the result is ajwa.
