@@sernani99 the machine we used here was a very basic machine. "A lot" is subjective. I think it was about $3,000. We have since moved on to larger machines from other manufacturers since we are doing larger volume as part of another company we own. Why is no one showing how to freeze dry just the lemon juice and pulp. The white part of the peel has no flavor but is a beneficial flavonoid. The rind contains delimonene which is not healthy and will not be part of the lemon flavor it is a natural oil solvent. I whish someone would focus on the juice not the peel. It is not at all difficult to juice a lemon but everyone wants to process quickly instead of accurately.

If I may disagree? Your own argument is that you need more than just calories. And I would say, more than just protein. There are two different groups you may be talking to, here. For long term, high density planning, of course canned chicken is best. Not only is it healthier, but it's also more flexible for meal planning BUT....if someone is just starting to prep, SPAM is a fantastic way to go. It has protein, fat, salt, sugar, really everything. In TEOTWAWKI, none of these things might be easy to find. And it's easy to add a small portion to rice or beans and make a really well-rounded meal. And even if you're not just starting to prep, SPAM is still a great cornerstone of your stockpile. Doesn't need to be cooked, comfort food, can be bartered, literally has a 30 year shelf life. Not your ONLY stockpile item, but definitely have SOME

Once you have the product powdered what’s the best way to store? I had some pickles I powdered and they hardened in glass mason jar with O2 absorber!
@Project5P Жыл бұрын
Powders do tend to harden with oxygen absorbers. Still usable, just might take a little work to break up the hardened clump. You can nix the oxygen absorber depending on your storage conditions and how long you want it to last.

Has anyone seen the recent cost of those bags? If you already have the 1 quart canning jars, youre better off doing it the good ol' fashioned way of canning which also keeps the burger in more of its natural moist condition. Aside from the 1 quart, we also use the 2 quart canning jars that my grandmother used back in the 1940's and we got a 4 year shelf life which likely would have been longer if we hadnt opened them.
@pz82652 жыл бұрын
Lol bags and O2 absorbers are FAR less expensive than jars. And the shelf life is far more than 4 years when freeze dried.

@@pz8265 Please learn to pay attention, ok :) We clearly said "if you already have the canning jars" and also clearly said would have lasted longer than 4 years if we hasnt opened them. Furthermore you will get many more times of reusing the canning jars than you can those bags
@pz82652 жыл бұрын
@@tymz-r-achangin then why even bring up cost? Obviously it's cheaper if you use jars you already have. Duh. But it also weighs a lot more, doesn't block light which will deteriorate the food faster, and has a shorter shelf life than freeze dried, no matter what.

I use bottles when I have a small amount. But I use bags or my cans when I have alot or i accumulate more of the same thing. If I have to bug out or have to move and I have to take food I don't want the bottles that break. You've wasted all that time, food, and money when your food has glass in it. And it is always heavier to have to move around.

For anyone wondering, this is not how you make beef last for awhile. The fat was not rendered out of the beef correctly, the fat went down the drain so it will smell terribly now, and it was not sealed in a vacuum chamber sealer. Ground beef needs to be sousvided, the fat needs to be drained while still hot and using a salad spinner, and you freeze dry it pre frozen so that you decrease time for the chamber.

Does the oil in the seeds reduce it’s shelf life?
@Project5P2 жыл бұрын
I don't have any that is 25 years old where I can answer definitively but I can't imagine the amount of oil is enough volume to alter the shelf life much. Even if it cut the shelf life in half, we will likely use and replace this in the next 10-15 years anyway.

Weight, portability, and practicality. We store far too much to fit in jars and it would be far heavier and more expensive to use jars. Plus one of the big reasons we, as well as customers, store freeze dried foods is for camping, hiking, and emergency situations that may require temporarily relocating. Jars are not practical for those purposes. Having said that, for products like fruit and vegetable powders that we use regularly, we often do put some in jars.

According to the "Freeze Drying Experts" you will need to use very low percentage of fat ground beef and rinse it after cooking in hot water. That will get rid of much of the fat that is what causes the meat to do rancid over time even with and OA in it and sealed. I cook my meat with onion and maybe even peppers and use plenty of garlic. Yes it loses flavor when rinsed, which is why I use the onion and garlic. You can use other spices as well. I figure that I will be using the ground beef in either mexican or mediterranean dishes which will take care of flavor. It will certainly be better than no meat at all. If you handle the beef without gloves while bagging and feel any greaseiness then you will likely only get maybe 3 years of storage from it. No one has determined exactly how long freeze dried meat will store, Obviously you get more storage out of meat that is FDed commercially but we don't really know what they do to it to remove the grease. When doing chicken I've found that breast is quite dry compared to thigh's. Costco rotisserie chicken is delicious but is VERY greasy. DANG!
@Project5P2 жыл бұрын
Yes when we are planning for longer term storage we have started rinsing the beef. This particular batch won't be kept all that long. Are you seasoning after rinsing? We do that to avoid the obvious waste of just rinsing off all the seasoning. Thanks for watching!
@hydej16672 жыл бұрын
@@Project5P Seriously . . . . There is no reason to rinse the hamburger and loose all the flavor. Have you ever looked at the fat content in the commercially available freeze dried foods ? (One example Mountain House) Check some of them out. They have quite a bit of fat in many of their items, including hamburger - which they say will be good for 30 years. We start with the 93/7 hamburger which has only 7% fat. We've only been freeze drying for just over 5 years, so we can only say from our own experience that it is still good for that long. No problems with any of it, yet. 🐸 People get too worried about a little bit of fat. Make Sure everything is DRY and use oxygen absorbers always. And make sure to use good quality mylar type bags or canning jars. Research actual freeze drying papers, never just accept something because someone saw it on the internet. There are many good freeze drying research papers that are available.
