I always wish they put what is happening in the back. Is she cutting the thread and starting over with every different line? Is she just going without stopping? What’s happening??

The entire satin stitch is done with same continuous thread. No cutting the thread with every different line. It's a continuous process, only when the letter is completely filled, a knot is made at the back side with the same thread and then the thread is finally cut. Hope this explanation helps
