I see sometimes c being read as an s and sometimes as sh or sch. Are both acceptable? For example, cai being pronounced as sai by some people and shai/schai by others. I'm wondering if it depends on the region/dialect

Thank you, Ivan, for your comments. exactly it all depends on the region one is coming from. Dialect and pronunciation are slightly different.
