This is very helpful! Next you can try setting up tailscale to access local lan and test out some of their beta features. I have it on my system and it makes VPNs very easy. You can access your content from anywhere in the world then.

Does it happen due to any form of corruption due to power loss? Or since both OS are accessing the same set of data or something similar?

It usually happens either because of a broken install or uninstall of the second OS, where the boot manager doesn't know which OS to boot into, we're using the chainloader command to direct it manually

That's because ESP has high level of 3.3V, and module uses high level 5V. So ESP's 3.3V is still low for that module. Best is to use optoisolated relay module. There should be no problem like that there.
