Great technique for rolling. I've been researching shapes, (because I don't really care for the flat layers) and I think you got me! Just wondering,....why didn't you use unsalted butter? Seems like it would be easier than trying to avoid it t the bottom of the pan.

Hi Liz I feel the same way about traditional baklava, I find it's too dense and all the syrup goes to the bottom I just don't care for it, but the way my mom roles each individual piece it changes everything and I can't stop eating them, as far as your question about the salted butter, I asked my mom and she told me that the 80 year old woman that taught her told her not to ask and just do it the way I do it! LOL. She did tell me she tried it once with the unsalted butter and it didn't quite taste the same.

This recipe must be her signature dessert, her pride and joy. Lots of good cooks are not willing to share their recipes in fear that it will no longer be the dish everyone looks forward to at a gathering, since everyone can now make it. That is how a co-worker explained it to me, after he finally gave me his prized potluck recipe. I had to promise to never bring it to a work potluck while he was there. The truth is that by sharing his recipe he is continuing his legacy of good food, now that he is gone,John's Potatoes continues to be a part of our company's, family's and church potlucks.
