If you want an easier way to impart LME (and if you have one) - use a hop spider. You can pour the LME in the spider and it will keep the LME from scorching. I also encourage you to try the NB Maypole Maibock kit - I like it with Mangrove Jack M54 Californian Lager Yeast. Prost!

I’ve tried Darwin’s Forehead and gave it a 3.5. Adam gave it a 4.25. He likes most porters more than I do.

Agree with this. The ‘American IPAs’ are going to lean a little more West Coast even if they look hazy. I knew you guys would like the stouts though. The pastry stouts can be a little heavy for me but no denying they are outstanding.

Only on my 5th brew but so far all the recipes called for 60 min. steep time on the grains. Also you want to kill the heat when you add your sugars, it helps reduce the foaming which can boil over and cause a mess.

Quads are my absolutely favorite, unfortunately not many people appreciate them. Gulden Draak and St Bernardus ABT 12 are my absolute tops, but Bourbon Barrel Quad from Boulevard Brewing Co (Kansas City MO) is very freakin nice! Cheers!

Impressed how neat and clean you were through the process. It's been a while for me, but my brew days always looked like the aftermath of a tornado. You looked well prepared and your process looked solid. I was confused initially why you weren't mashing the grains but forget that with extract you don't mash, I guess. I do wonder if it makes a difference to reach a strike temp before adding the grains to the water, even with a partial mash. Only other comment is keep an eye on that air lock. I've had a couple brews that have blown through the airlock when the fermentation really gets rolling. Eventually I would just start with a blow off tube set up for the first week, then move to an airlock once things settled down.
