Honor system is alive and well in a couple of places I know of in the South. At a farmers market on a bayou in South Louisiana, and at least 1 place near McComb MS. Mostly though, it went the way of party-lines and household doors being left unlocked. Hoping, praying, that those days will return.

Just getting interested in really good tea. But I am a very frugal man at heart, and I was immediately so shocked by the Chinese tea ceremony! They dump out the first steep of all this super expensive tea! This appeals so much more, drinking several steeps, seeing how to flavor changes, and even eating the spent leaves! Now that's getting everything out of the tea and respecting the farmer who took the time to grow it for you.

That’s more about ceremony, It all goes into your stomach and is digested no matter how you fix it, plus she made it strong, I use only 1/4 teaspoon of matcha at a time

Well, that was nicely done! Locally some coffee and tea shops have this, but they are really oriented to making sweet and milky drinks, just as they do with coffee. I don't think anyone wants to make a little cup of strong foamy green tea, in a preheated cup! Too bad, we have to do it ourselves. Fortunately we have KZbin "charistas", did you say? Thanks!

This is kinda the American portion I guess. What I learned in Kyoto was about half of the powder and half of the water, bowl is about the same size which don’t be dangerous close to spilling when you whisk like the video, but it would actually take longer to do so and we add a little bit of water afterwards. Hot water temperature is 75-80°C :)

The whisking was a workout for me. I had to do it extremely rapidly, going through a whole container of matcha before I was able to get a good froth.

just use an aero latte, it works like a charm. I also use my latte maker heater (nespresso) and it makes a great tea too from cold water.
