So it seems the standard way is to mix sugar, starter culture, and salt together (for some type of salami that requires starter culture). The bacteria eats the sugar and produces lactic acid which is anti harmful bacteria and reduces water content. I've read studies saying just 2.5% of salt is sufficient to kill all bacteria and worms after 60 days. I understand the meat used here are clean. This is why some video say 3% salt just to be safe. So why does commercial salami have 20% salt? I think they want it for shelf life and they just don't want to be sued for being unsafe. Soak it in cold water in the fridge for an hour or so if you want to get rid of the salt.

An idea for lazy recipe would be to compress them in stainless tubes and push the sausage out then allow to rest on baking paper to harden. There would be no need for casing. This is a good activity to get friends together to build community. Maybe I can organize something similar. I thought of cooking food in large vats and can them. This way people can clean up their pantry of things they don't eat and we can come up with ideas to process them.

Should starter culture and sugar be allowed to sit with the meat for one night so the bacteria can eat the sugar first, then add salt later? If added salt and sugar together it would kill the bacteria?

My uncle had one in the 70s same colour. He didnt no it was an a9x he didnt khow what an a9x was. He bought from the auction cheap even they didnt know. That car was faster then alot the v8s back then. It got stolen 3 times then he sold it for cheap and the guy still owns it and knows what bought

I wish the Australian Armour and Artillery museum would lend their Sherman Firefly to Yad La Shiryon , Israel's Armoured Corps Memorial Site and Museum , which seems to have every variant of the Sherman tank EXCEPT the firefly - the Israel Air Force Museum near Be'er Sheva , even has a Sherman chassis converted to a SAM launcher , but alas no Sherman Firefly
