Open gill under the jaw slip your fingers along the inside, between the outer gill plate and the gills themselves. The gill plates can be sharp too, and you still need to be careful of the upper teeth.

Thank you, looked like it turned away but, I've learned to do the figure 8 anyways. They usually hang around looking for another chance to strike, this was a cool eat too.
