Why does the food stick to the bottom of your wok?

As the wok cools, it looses some of the non-stick qualities of a well-seasoned wok. Adding ingredients in quickly also cools the wok quickly. Adding an ingredient with a high water content also makes food stick. It’s always a dance balancing the amount of heat and liquid while cooking in your wok!
