I’m going to try and substitute milk with soya or plant based milks as well i’ll substitute the two eggs with chia seeds and water to make it a vegan option. Thanks Carol.

Hi. There is so much information on Starter, it's very hard to understand the process, yours is the clearest to date. Let's say that I use a bit of starter, do I have to feed it given that I took some, and do I feed the amount that I took, or do I feed a quarter cup of flour and water as you show in your video? it takes 7 days to feed, then after that can put in frig? how do active for next time to bake?

Take it out of the fridge, loosen it up with a gentle stir, feed it, then proceed the next day. That will reactivate the yeast as long as you haven't neglected it in the fridge too long. I've kept mine in the fridge for up to 7 weeks at 40F and it reactivated readily.

Now I know why mine wasn't fermenting....chlorinated tap water!...When I started watching people using scales and weird measurements......Ummm my great grandmother, grandmother and mother never used a scale! Your method was the easiest! 1/4 flour and 1/4 filtered water... ♥

Equal parts flour and water actually means you'd use about 1/8 water to 1/4 cup flour by weight. That extra water makes a HUGE difference. I'm really surprised that's not mentioned in the very beginning.

Lovely. A nice easy way to get started. What about when we use the starter, how do we do that with no discard and do we have to feed what is left every day? There are so many conflicting videos and it is difficult to make sense of a lot of it.

Equal amounts of flour and water, when measured by volume rather than weight, would yield a significant difference in the hydration balance of the starter. I am new to this and now totally confused as to how the no discard recipe could work the same.

That's exactly what I thought !! It would be close to 1/8 cup of water to 1/4 cup flour. And that makes a TREMENDOUS DIFFERENCE . It would be nice to be directed at how much to use and leave in the jar. Other videos say mix quite a bit more the night before using in a recipe.

Hello, Your sourdough will be ripen by day five, when you can use it for your recipe. Save about 1/4 cup and repeat until you wish not to use it any more. At which point you may feed it and place in the fridge to slow down the process. If you're taking a break, please note you still have to feed it every week (once). When you decide to use it again take out of the fridge and restart your process. I hope this helps.

Preserve as in if you want to take a break from making sourdough? If so, you can place an established sourdough starter in the fridge. Feed it once weekly to keep it alive. Once you want to use it, then you must feed it daily for five days before using it (same process as I explained in the video). This will ensure that your starter is healthy and ripe once you use it. I hope this helps.

@@kimsorensen8081 If you are only using it once a week, I would say to leave it in the fridge. Then feed it and you can use it within 12 hrs, but for better results feed for a few days.
