Yes its true. What i know those are for demonstrations only. They are also trained in the actual fighting too. There are more than 20 forms of different locking but only few (about 3 to 5) are practically workable. The movements in the video are to demonstrate how the unlocking can be done if we quickly react before the lock is completed.
