The catch is you only have limited number of 5* champions, and very likely most of those are legendaries that are vault guardians and you can't use as chickens, because they have more value. Yes, you can use that technique you've shown, but in 1-2 champ trainings you'll run out of unupgraded 5* champs. On the other hand, 2-3 * champs are far easier to get, and since we need food for the champs that we build, it's valuable to use the potions to upgrade them and use them as food.
