My Grandmother Made beef stew on an open fire in Dublin in the 1970ths minus the Guinness. I do the same with the Guinness .Thank you for your video.

I don’t know if it’s common or if my family is just weird but we always had a long set of aluminum nails/spikes we would put through the potato after wrapping them in foil, to distribute head through the center. Worked out pretty well. Only way I have ever baked potatoes.

Try this next time. Slice potatoes across abot 1 cm thick. Then put it on a sturdy skewer interchangeably with fat tail lamb fat or a slice of salo. If it’s not sold in your area, a slice of bacon would suffice. A slice of potato, a slice of bacon, a slice of potato, a slice of bacon and so on. Season to your liking. Then wrap the skewer in foil. Don’t go too thick, a couple of layers is more than enough. Make it tight, so that the melting fat doesn’t drip through or at the ends. Put it over hot charcoals (not on, over). As soon as you hear the squarching sound, rotate 180 degrees every 5-10 min in about 30-40 min, your potatoes should be completely cooked. Take the foil off, dump the liquid from inside and put the skewers back over charcoals until the crust developed on the outside of the potato slices and bacon / fat rendered. Try this I sometuubbbtells me that you’d never use nails again 😜

My mother made basically this same recipe. I am pretty sure Mom used wine in her version with the tomato. She just put the vegetables on the plate with the meat. She did not take that extra step to make a sauce. That looks like a great extra step. It is pretty much like Mom's, so I know it is really good.

They look like Hatch chili peppers to me. They are not too spicy. If they are not Hatch, then Hatch would work nicely. The red ones look like Cayenne peppers.

Don't imitate others. Do something from yourself and come up with a form of communication. And the worst thing you do is what you do with the food. When trying food with a fork, do not eat with the same one. The cheese should not be heated at low temperatures - outdoors. Gain some culinary knowledge, and don't just look at the money you make from subscriptions. Regards.
