yeah but you're forgetting one key facet, speed, we don't want our astronauts to age 10 years trying to visit one of jupiters moons... another issue is fuel economy the reason we don't accelerate longer and get to higher speeds is cuz it's not viable, atm it's basically "short bursts of acceleration followed by long stretches of coasting" because it literally has to be
