Ruby, you desperately need to invest in some decent knives. That paring knife is the wrong knife for the job of chopping nuts. You need a sharp chef’s knife.
@rubysclassiccooking10 күн бұрын
I have a nice sharp chef's knife, but I have the bad habit of using paring knives for nearly every task in my kitchen. I guess it's because I'm a home cook and not professionally trained. lol

I’m absolutely love fruitcake it’s my go to food. Because it’s literally a meal in itself and my mommy makes the best fruitcake ever but she uses cheese cloth instead of parchment paper and use uses wine and liquor and she injects it with liquor for like 2-3 days and let it soak up all that goodness. But yours is the closest I find to how my mommy makes hers. Plus with fruitcake it will hold you from breakfast to a late lunch every time. Good Job

Thank you I have been making it every Christmas since 1979. My dad loved it and my husband loves it. My daughter makes it every Christmas too. Some people do wrap up fruitcake in cheese cloth and soak it in brandy or brush it with brandy every day for a few weeks.

One of my neighbors has a mature Gravenstein apple tree (we are in a rural area NW of Olympia, WA, USA) and he told me I could pick my fill of them this week. I was thrilled because my mom, who has passed on, always told me that Gravenstein apples make the best apple pies; I just remember how yummy her's tasted. She liked to serve them with room temperature sharp cheddar cheese. I started processing a few pounds to freeze today, and the rest I will use to try your recipe as I couldn't find mom's. Thank you!

They are the best apples I've ever used for pie or apple sauce or apple crisp. They are also a wonderful crisp and tart apple for eating - but only when they are fresh from the tree. I hope you enjoy your pie!

I live in Gravenstein country in California, and this is near-peak season. The big wooden apple bin in front of my local market grabbed me with a strong apple aroma, so I bought some. I will make my first pie following your recipe, except that I'm going to substitute some of the nutmeg with pumpkin pie spice, just for variety. We'll see how it turns out. Thanks for the video.
@rubysclassiccooking3 ай бұрын
I hope once you try it you see why it's my favourite apple for pie as well as apple sauce, apple crisp and for eating! I can't wait for September, which is Gravenstein season in Nova Scotia. Unfortunately here they are getting more rare as they are fabulous apples, but they don't ship well. The pies also freeze well!
@williamdonahue66173 ай бұрын
@@rubysclassiccooking we just had the Gravenstein Apple Fair in our area last weekend. I think they will always be available here. I made my pie last night and added some pumpkin spice as well for a little extra zip. It came out spectacularly. It’s the first pie I have ever baked and it’s really not terribly difficult. However, I cheated and used a premade crust. Thanks for letting me know that they freeze well. I have some extra filling and I will make apple crisp with that tomorrow.
@rubysclassiccooking3 ай бұрын
Great! Always feels good to introduce easy to make great foods to my viewers. There's nothing wrong with using a premade crust! Hope your apple crisp is delicious too! I have also pre peeled and pre sliced Gravensteins and frozen them in amounts for a pie. That also works well if your freezer space is limited. When ever you want a pie you just load up your crust and bake. Hope you check out some of my other over 100 videos.
@williamdonahue66173 ай бұрын
@@rubysclassiccooking Just subscribed, and I'll check out your many videos. Great suggestion about freezing pie filling, which I will do. Went to my market this evening, and the Gravensteins are gone, but rhubarb re-appeared after several months. (Win some, lose some...) Here in northern California, it's also peak Roma tomato season, so I'm making and freezing pasta sauce like mad. Beef ragu, lamb and juniper berry ragu, tomato and basil sauce, and you name it. I understand that Canadian food prices are high, as they are in California, but taking advantage of high season is the best way to make the most of it. My main despair is apricot season, which comes and goes like a thief in the night. All best.

OH MY GOSH THE BOOKLET!! I grew up with this booklet in the house, and about 2/3rds of those recipes were made and they were all so good. Best chocolate chip cookie recipe I ever made. It wasn't kept and I've been looking for a copy for years now to no avail. You hold on to that literal treasure! Thanks for this recipe - maybe you could make a series of videos from that booklet for poor souls like myself? I'm sooo thrilled you've posted this, thank you!

Oh wow! Which recipes were your favourites? I'll either arrange to send you copies of the recipes or make videos of them so you can have copies. There's Rocky Road Fudge, Fabulously Flawless Fudge, Chocolate Star Ships, Mocha Truffles, Chocolate Dipped Cherries, Nutty Chocolate Clusters,Chocolate Glazed Butterballs, Nanaimo Bars, Jumbo Chip Cookiecard, Chocolate Strawberries and Chocolate Cups Chantilly.
@carolyngardner153511 ай бұрын
@@rubysclassiccooking Are you serious?? Holy smokes that's ridiculously kind of you! Oh gosh, seeing the names listed are sparking such memories... my sister wrote out the fudge and jumbo chip recipes when she left home first so I have those, and I'm allergic to nuts although I feel like we might have messed around with a few recipes by omitting them. The ones that I'd love either copies or videos of (the videos would be very fun to watch, but no pressure 😀) would be Mocha Truffles, Chocolate Glazed Butterballs, Nanaimo Bars, and Chocolate Cups Chantilly. I think the butterballs had nuts that we omitted if I'm remembering right, and I can't remember at all what the starships were about. I don't need the strawberries or cherries, but that reminds me that I do believe it was the first time I saw chocolate dipped fruit and thought 'wowwwwwww!' No matter what you decide on, I really can't thank you enough for being so generous in offering this, it's just so nostalgically fantastic for me.
@rubysclassiccooking11 ай бұрын
Hi, if you can send me your email address to [email protected] I'll copy off the recipes and send them to you so you can have them for Christmas baking this year. Do you use metric measurements or the old school cups and teaspoons? The star ships are chocolate cupcakes with smarties on them. The chocolate glazed butterballs do have pecans in them. They sound yummy I think I'll try to make them and if they turn out for me I'll make a video. Also guess what I googled Baker's Treasury of Chocolate Treats and Guelph University Library has a copy available for loan. How crazy is that! It's in the Jean Pare collection. No photo but it must be the same booklet!
