cat5e can do 2.5gbit. I think it can do 10Gbit wrt signalling theory, but lots of physical factors could limit that

Oh yeah, CAT5e is way better than just plain old CAT5, which we unfortunately have too much of floating around in the hotel. You're correct that CAT5e can carry 10gb over short distances in the correct conditions.

These are network connected sound input and a source and volume control remote pad. Perfect for a large scale AV system, these are older and being replaced with a more modern source soon.

That's what happens to equipment left exposed to prying hands for 8+ years, haha! And that's an old Wirepath Surveillance NVR.

Was that a cctv camera? Looked like a bnc connector plus 12v power and maybe ptz signal

Yup!, that is a BNC with 12v power, replaced with a POE converter and new camera.

Those coax to POE adapters are nifty, I'm surprised nobody makes a unit that does 8 or 16 in one so you don't have to deal with individual dongles... surely this is a super common use case when doing CCTV retrofits

This was the first time I'd used these and they were surprisingly great! But I'd love to see a 8/16 or 24 port option to make it as clean as possible.

Sometimes the worst part is when the client wants to know "why" something is happening/happened. I was just the IT goon, not the NATSB doing a crash investigation. I worked in a hospital, where every workstation cable was zip tied down. So you had to undo 10 zip ties just to remove the bad workstation.
