You’re on a MacBook that’s the problem. PBR baking only takes me 2 mins max. (I have a propper PC for modeling and rendering. 12th gen i5, 16GB RAM, RTX 3060ti Desktop) Only do cycles bake when you want lighting baked into the texture. The one and only troubleshooting/adjusting I had to do was for normals. Alls you do is name your models Iv simplebake, select the objects you want baked in the simplebake menu, tick box’s for the maps you want, then with 1 click and it bakes all your maps perfectly at one time in 1-2 mins max. Check to make sure you have good UVs and upgrade to a Desktop PC that’s capable to handling Blender and you shouldn’t have any problems. Have fun Blendering ! Link to your portfolio?

The problem with your file is in the blender settings, to solve it you can go to "edit" then "preferences" and "add-ons" in the GLTF tab activate the function to export with embedded files. That way when you export you will have the option to export packed... and not with the loose bin.
