When the Klingons attack DS9 in The Way of The Warrior, Cisco tells Martok and Gowron that DS9 is now packing 5000 photon torpedoes along with the phaser upgrades. I don't think there's a canon number of quantum torpedoes for the Defiant though. It's never mentioned.

I wonder if they ever build a second malevolence and use for the battle of courncant in 19 BBY in the final days of the war
