As a PhD chemist I looked into this but actually your fingers have cutaneous free nerve endings which after interacting with capsaicin will release substance P which can cause intense burning pain in your fingers. So another reason to use chopsticks 😂

La Mexican food is trash . Tj is the best then San Diego and then forget about it . Also Mexican food and tj street food is very different. Tj street food is very delicious
