I made my first tortillia yesterday after watching a nice short recipe, it was simple and came out perfectly, never once worried about burning it or doing the flip. So seeing Marco actually stress about it here is both hilarious and makes me think ignorance is bliss.

I always thought the onion goes before the garlic. If I did it that way I would have burnt the old garlic….and no one wants that!

Showmanship aside, if you have ever ordered a Spanish Omelette, I guarantee the only way you could have eaten it is smothered in ketchup. They are greasy tasteless lumps. Not just his, all of them. Yuck.

MPW is hillarious indeed, but the fact is a Spanish omellete should be made with olive oil. that's how it's done in Spain. you could confit the potatoes and onion with sunflower oil f you dont have enough olive oil but the cooking of the omelette itself has to be with olive oil.

a well seasoned iron skillet is non-stick as well if one knows how to use it, there more one does anything the better the end result will be.

Marco's methos is crap.He should wait at least 15 minutes before putting the potato eggs mix back in the pan again. also the potatoos/unions mix wasnt dark enough

Just some advice to those who want to follow the chef style: don't put hot potatoes with raw egg, you cook the egg. Put potatoes aside and let them drain from oil. Once you cooked all the potatoes, yes mix with the eggs to follow the next step.

Pero que MONSTRUOSIDAD es esta?! Mira que he visto videos de tortillas de patatas por internet, y algunos no me dejan dormir por la noche, pero esto es otro nivel. Esta tortilla parece sacada de lo más profundo del averno, donde ha sido cocida durante siglos. Te meten una tortilla así en un restaurante y se lía una que hay que llamar a la Guardia Civil. Como se nota que un plato así hay que practicarlo, y mucho. Ni chefs profesionales ni ostias, las mejores tortillas, las que lleva haciendo 40 años mi madre y 70 mi abuela.
