good job. everybody has their own version on how to do what you just did. I do sockeye skin on whole filet no cut up kosher salt 1 cup brown sugar 1@1/2 cups 1/4cup of Old Bay @ 1/2 cup pepper. 8hours in the fridge then rinse off back into fridge on rack and drip pan for up to 3 days then into smoker at lowest temp possible for at least 5hours or more depending on the amount I might be doing at the time. This is not good direction for an oil that cannot be cooked at 400F or more. ⚠️Very toxic to breath in olive oil at this heating point. The oil will smoke ⚠️through out your home.

Thanks for your video! Your recipe sounds delicious and I am looking forward to making it. Is there a possibility that the amounts for salt, garlic powder and onion powder are in error in the Rub Recipe posted in the Description Section? They appear to differ significantly from the video. The rub recipe in the description section appears to be doubled from the recipe in the video. However, in the video you use 1 tablespoon kosher salt and in the description, it lists 2 tablespoons salt (commonly meaning table salt vs the kosher salt mentioned in the video). Also, the amounts of garlic powder and onion powder in the video are 1/2 teaspoon each. In the description, that recipe calls for 1 tablespoon each of garlic powder and onion powder. I think that it should be 1 tsp of each of garlic powder and onion powder instead of 1 tablespoon of each. If I am mistaken, my sincere apologies. I noticed the differences when watching the video as I was copying the recipe from the description.

To those who questioned - no, you do NOT soak the plank. The fire burns it right up to the edge of the onion moat (which is partly its function). Then, the plank is charred mess on the bottom, so a tricky transfer to a cookie sheet, ideally with two large spatulas.

Visuals are misleading - you need much more onion more thinly sliced. You should not be able to see the fish through its fire-proof blanket. That's how Vitaly does it.
