In my head canon their style vary so wildly because of the fact that. Luke barely had a teacher and therefore his style moving forward wasn't the greatest despite his power and connection to the force. When he restarted the Jedi Order his ability to teach the multiple styles was extremely hampered. Leading to Kylo's insane style and Rey's lack of speed. Even in the high republic they were less likely to encounter a force sensitive person let alone a Jedi level force user so even their fighting wasn't up to prequel level. When the Sith stepped out from the shadows the Jedi had to bring their game up to meet their level.
