Nice one. Are these breads free from dough conditioners too please? So you effectively do a 16 - 18 hour autolysis? Just flour and water? I've never heard of such a thing, but I don't doubt you know what you are doing. 👍

Thank you for your comment :) Not all of our breads are so simple, but when it comes to our sour bread range the majority are made of flour, water, salt and natural yeast from the environment (Home grown culture). Have I understood correctly you mix your flour and water and stand it in the bakery for 16-18 hours, with no salt or natural leaven? Just curiosity and seeking to understand. Thanks

You say not to de-gas too much, but then go in to give the dough a good drubbing with your knuckles. That was very heavy degassing. The breads' crumb must have been very close. Still it was interesting just to see the shaping technique.

Hi thank you for your comment :) It's pretty difficult to tell how much pressure is being put into the dough on video, but it wasn't as hard as it may seem. It was just being shaped

It's just a fun fact, it's becoming really common to x-ray food whilst it's being manufactured. The radiation levels are super low, they're very highly regulated too so there's absolutely nothing to worry about :)

@@greenhalghscraftbakery Yeah maybe but... You don't know who is eating it. Maybe they are weak to it? That's like saying, "Oh we cross contaminated a lot of food but... It's only slightly!" That's really not okay. As someone who has worked BoH for over 15 years, that's not an acceptable risk for people in our line of work.
