This is italian renaissance music, its supposed to bounce a bit. It does sound very pretty this way and the singers are wonderful, but please listen to some madrigal music (including secular like month of maying, il est bel et bon, etc), and/or other recordings of this same piece, to get a feel for how it is supposed to sound.
