You're completely wrong about beef fat. Tallow is better for you than seed oils and will NOT clog your arteries. I save all the fat from ground beef and use it to fry other foods with. Look up any of the folks here on YT, including doctors, who are on a carnivore diet and eating lots of beef and beef fat (tallow). Many of them include their before and after blood test results. If you really understood how healthy beef fat is, you'd never waste it in a paper towel again.

@@CookingwithRegina Start with Dr. Anthony Chaffee, Dr. Ken Berry and/or Dr. Eric Berg. Chafee and Berry are full carnivores, Berg is keto. Another channel that is not a Dr. is Kerry (sp?) at the HomesteadHow channel. The Doctors I mentioned are full fledged real doctors except Dr Berg who is a Chiropractor who's done extensive research on nutrition. Kerry, I believe, started carnivore with or because of, Dr. Chaffee, at any rate, they're linked somehow. Many of the people commenting on their channels give their before and after blood tests and lipid panels or the Drs interview them. Best of luck. These are all on YT.
