@@JimW-xy2kl So sorry!! I’m not sure why that happened. Maybe your water was boiling too rapidly and your eggs were very, VERY cold? I’ve done this so many times and I’ve never had an egg “blow up”. I have had some that had a slight hairline crack in them that was too small to be seen when cold, and once it hits the water those will ooze and some of the white will come out. Never had one explode as yours did! 🤷♀️

@@ss-ib8gm Just make sure the water is not boiling too rapidly and violently. Inspect your eggs before putting them in. Sometimes a raw egg will have a hairline crack that we can’t always see and it will break along that line if the water is too hot. You could try taking your eggs out of the fridge a few minutes before boiling them. Also, if you lower your eggs slowly into the boiling water, you should have success. Hope this works for you!! .

When I have put cold or room temp eggs in boiling water they crack and the egg leaks out into the cooking water.

@@WorldWideWebObserver Just make sure the water isn’t rapidly boiling and going crazy. Inspect your eggs. If they have a small hairline crack they will definitely crack more and leak. Some times you cannot even see a crack until you place the egg in the water, but if you see small bubbles emanating along the surface of the egg, it has a defect and you WILL get a rupture. Hope this helps.

I wasn't putting you down with the comment. I just wanted to say that before you see it. I just tried it today and I love all the knowledge you give people. Thank you so much, but yes, even with just the leaves. Crushed and trust me, where I'm at right now. I was getting bit up every second and just crushing the leaves. And wiping the Mommy stopped everything but I made what you said to make it but I just boiled the leaves. I didn't even boil them. I just like you said seep them.

Good video. Just a note, the sugar content prevents botulism, hence the reason you can waterbath. The seal prevents spoilage and mold. This is always good to know when you’re given a gift of jams, jelly and pickles, you don’t have to worry about botulism if it’s not processed right. You can tell if it’s bad by smell and sight.

Best video. Too many talking about adding vinegar, salt and ice. Who has that many vinegar, salt and ice to use. Then you have those using steamers. Never had issue boiling eggs that don't stick because I did this exact way without understanding why.

I really didn’t need an emulsifier on those products. They seemed to do just fine without. And yes on preservative! Since I posted this, I have begun about adding a preservative in any water based products that won’t be used within a few weeks. Definitely something you would want to increase usable life without risk of bacterial consequences!! I’ve made some salves and other products from plantain leaf this season and I am using Optiphen Plus for any products containing water. Thanks for asking. I may need to add that info to the post!

I am soooo sorry I just saw this note. Yes, of course meringue is safe to eat without using the torch. That only darkens the top layer anyway and does not really cook your meringue. As long as you use fresh eggs, there is no concern! I hope it was wonderful and you enjoyed it. Please let me know!
