To grow a tree that has specific properties that you are looking for, not found on the rootstock. You could for example plant multiple varieties of stone fruits or apples on the same one rootstock. Certain rootstocks can give you best resistance or a later bloom time, or give you smaller trees that are better suited for harvesting.

You cut off the whole tree KNEE HIGH and wait for fresh new shoots and then graft those new shoots

Thank you for your video. I planted several trees on a small orchard 8 yrs ago and the graft died couple of yrs later, but the rootstock survived into a tree producing marble sized hard pecans, but once I saw you grafting a complete grown tree ( my tree sizes ) it gave me hopes. So I stake/bark grated about 50 trees as these trees were sprouting leaves, grafted them with scion ( branch tips) taken on January from good sized soft shelled pecan producing trees. The grafts took to my surprise, after 4-5 weeks they sprouted leaves, and now in the sixth week these graft sprouting leaves/branches are producing blooms (flowering). Now I wander if they will produce the actual pecans so soon, is this normal to flower so soon? Thank you.

Pecans are really unpredictable just like women and hurricanes.Some years will bring great crops while some yrs don't produce.They are supposed 2 produce every other yr but that is debatable.
