I dont think its possible to feel accomplished every day, its more feel accomplished of your path. Doing the best with limited resources is also a good skill. If you have the whole time in the world, as you said, you won't ever finish anything and by consequence you won't improve as much.

Unfortunately this phase you are going through is part of it, stress makes it worse to deal with. But trust yourself and keep at it eventually it will become easier. Look at something like "bipolar disorder cycle" images/graph and its basically those graph but apply it to what you were saying (the offset varies a lot tho) I don't know how you are planning things exactly but I am not sure if posting a video every Friday might stray you from your main goal, i guess it depends on how much time you allocate to it compared to the comics. (but I assume your comic work eventually will be involved in those)

Blender can also be useful for creating backgrounds in your comics and could possibly speed up the workflow! I’ve always wanted to use blender but it always looks so complex and I just exit out lol😭. Keep up the great work!!!
