This is my second time trying this and I wasted so many eggs again and there was one sack that had what looked like a beginning of baby salmon. A black dot. I'll keep trying.

Wrong on so many levels… USA badminton or tennis racquet to separate the eggs. Never wash eggs in faucet water… man, this is wrong.

Sorry, this just didn’t work. I got 8oz of salmon roe from my son, but following your video the eggs just refused to separate from each other or from the membrane. Any attempt do do so just burst the eggs. I’ve regretfully had to give up and bin it. A shame.

Just so you know, you can freeze the caviar for up to a year :) Just make sure to keep it deep in the freezer, not on the freezer door :)

definition of roe is marine animal eggs, definition of caviar is marine eggs from a black sea animal. ? or did you not know the difference between roe and caviar? you are making edible salmon roe, not caviar, if you sold this as caviar you would be lying to customer. the only two are beluga and sturgeon, this is only two real caviar in world i know of. all the others are just called roe.even after you treat it and salt it, it is still just roe. plus you are cooking the eggs with hot water always wash the egg sacks with cold water to avoid accidental cooking. this takes the flavor out.

The term caviar can also describe the roe of other species of sturgeon or other fish such as paddlefish, salmon, steelhead, trout, lumpfish, whitefish, or carp. Also, Beluga are sturgeon.

Hey folks, NEVER use cold water for making caviar (IKRA), because as the eggs touch the cold water they become so hard like ping-pong balls (not tender), use warm or hot (not boiling) water only. Also make salty brine (1 liter of hot water (165"F) and at least 3 table spoons of Kosher (coarse) salt. In brine you can easily adjust the salt content. Hold the eggs in brine 10 min. then dry it with strainer and paper towel. After that put caviar in glass jar and add a little vegetable oil (but not an olive). That's it, you can enjoy the caviar for 4-5 month. Yummy!!! :)
