Using oil in pork are crap and shit.... Those who don't know how to cooked pork always used oil.... Pork have lot of oil and still used oil??? Learned from northeast cuisine which are more healthy and oiless

Why is the order of spices so up and down? Usually garam masala is added in the end but here it is added in the middle. Red chili powder is added here in the end whereas usually it's added in the middle of the cooking. Same with coriander powder. Is there any specific reason for this??

It's a fatty meat. It needs to be cooked slowly over a long time till fat is rendered.
