Thid woman smacks too much when she talks and if she was a professional cook, she wouldn't have to look at a recipe book while she's preparing the food. Experienced cooks don't look at a recipe books if they've made the dish several times before. They'll know the ingredients by heart.

I think people over spice oxtails. I keep it simple and delicious with black pepper, tenderizer (unseasoned), lawry's seasoned salt, and maybe crushed red pepper flakes. Seared and instant pot add thickening slurry ...reduce on stovetop. Enjoy. You can actually taste the oxtails and NOT seasoning. Oxtails are too high for their flavor to be masked by seasonings.

One time when I was down in the islands I got a bad sunburn and everyone said to put vinegar on my skin. I remembered all the aloe Vera growing at the house I was staying at and cut a few leaves. Rubbed the gel all over my skin and the next day my burn had turned to suntan. Made me a true believer in Gods creation
