This “trattoria” of Piazza Rosa has become the “birthplace of fettuccine all’Alfredo”. More specifically, as is well known to many people who love the “fettuccine all’Alfredo", this famous dish in the world was invented by Alfredo Di Lelio concerned about the lack of appetite of his wife Ines, who was pregnant with my father Armando (born February 26, 1908). Alfredo Di Lelio opened his restaurant “Alfredo” in 1914 in Rome and in 1943, during the war, he sold the restaurant to others outside his family. I'm no culinary scientist, but it seems illogical to soak the fries to remove starch to then add extra starch in a following step. Can anyone explain?

You do you, but pork tenderloin is like the filet mignon of pork. The tenderest cut of all and more expensive per pound. Try this with a boneless pork butt or shoulder. Or country spare ribs. Cheaper, and the collagen and marbled fat makes for a more delicious pulled pork. You'll get more for less!

This is how I know food at your house is good !! You’re 💯right about the butt & shoulder being better choices for pulled pork. They require a little more effort once cooked than tenderloins do but the texture & fullness of flavor are worth it (especially if you cook them down bone-in 🤤) plus they NEVER dry out like tenderloins can & do- no matter how perfectly you cook them or what (liquid) you cook them in. Because it’s an extremely lean meat, when you cook them down till fork tender they tend to get dry and require more sauce/liquid to rehydrate -they’re still good -don’t get me wrong,I wouldn’t turn my nose up at tenderloin pulled pork 😂 ever !! How I cook tenderloins is: I sear them on all sides-whole and finish by roasting them in the oven in the same cast iron skillet until they come to temp because they’re 🔥🔥 delish that way.
