Love your videos, Gail, but I believe this is Almond Cream. Frangipane results when you mix this with Pastry Cream. Also, every reference I can find says that frangipane is French, not Italian. Yes, there was a Roman Frangipani family, but the cream came from France.

@@monelleny No that is incorrect. Frangipane is an almond custard- like mixture made with eggs. It can be used on its' own and baked with fruit in a pastry crust. It must be baked, and can't be eaten raw. If you make a cooked almond custard like a pastry cream, that can be combined with whipped cream for a lighter filling or frosting. An almond pastry cream is different from frangipane.

Just found you while I was looking for a Needham recipe. I grew up in Portland, Maine. I had friends whose mother made these all the time in the winter. On an old wood stove! She also made popcorn in an old popper on the wood stove. We'd have these treats after snowshoeing. Oh, I almost forgot to say that our always had dark chocolate.

This sounds really tasty, however, after watching you make this, it doesn't seem to be sweet enough. Strawberries need sweetened. Yours do not look sweet to me. Are you positive this recipe won't be too tart?

The saucepan that you make your curd in might be giving a bad taste. Be sure you are using a non-reactive metal like stainless steel when cooking it. Also, your whisk or stirring utensil could be creating a reaction causing a metallic taste.

Those other flavors would work very well with the buttermilk ice cream base. You could easily fold in some fruit, or chopped nuts after the ice cream has been processed in your machine. Gail!!!!! I just literally had one of your popovers. Omg delicious and beautiful. I watched several videos and the one I chose was yours. I am so glad. I followed the recipe precisely except I cut the recipe in half and I only let it sit in the refrigerator for two hours. Those popovers were amazingly high and beautiful. I mixed up a honey cinnamon butter mixture and put that on one of them and I can’t get over it. I have been sending my pictures of them to everyone. I know I wished I could send you one. Follow the recipe which usually gives a range of minutes like 20 to 25 minutes. I look in the oven after the lowest amount of time given. So I look in and check my baked good after 20 minutes as per my example above. If it's not done, I will continue baking. I hope this helps!

I need assistance using VWG in cookies. I've found this cookie that only uses Anthony's Vital Wheat Gluten as the flour in the cookie. When I attempt difference variations, the result is usually the same -- the cookies are stretchy and seitan esque. Do you have a tips to use vital wheat gluten to make cookies but for them to maintain a cookie like texture?

These are the ingredients in the cookie if helpful: Gluten Flour (Wheat, Gluten, Plant Protein), Brown Erythritol, White Erythritol, Soybean Oil, Sugar Free Dark Chocolate (Unsweetened Chocolate, Cocoa Butter, Soluble Corn Fiber (Non-GMO Resistant Dextrin), Sunflower Lecithin, Monk Fruit Extract, Madagascar Bourbon Vanilla Beans), Eggs, Water, Vanilla Extract, Pink Himalayan Salt, Baking Soda, Baking Powder Basically comes out to, vital wheat gluten, brown / white sugar, egg, vegetable oil, salt, chocolate chips, baking powder, baking soda, and vanilla extract from what I can tell. I’m trying to make a dupe of it but I can’t get the texture right with vital wheat gluten!

I only use vital wheat gluten for yeast breads. The extra gluten helps the bread's stretchy texture as a dough before baking. This helps to create a better yeast bread. Try using another flour in your recipe. Good luck!

@@whittsays You can try bread flour for most of the vital wheat gluten and only use a small amount of wheat gluten. I have never tried it in anything other than yeast breads.
