Just one little tip if you don't load your items they will never despawn. One of the biggest mistakes I see is trying to go after them without a plan thinking you have only 5 minutes, the truth is you only have 5 minutes when you load them. Turn your simulation distance down and take your time.

Stronghold. It's been a thing since 1.18. They spawn in the same coords in any superflat world no matter the seed.

Yup, stronghold spawns naturally in super flatworlds in Java and Legacy, not sure in bedrock

Assuming your on bedrock bc of the fast horse(there’s a glitch to get infinite speed with them only on bedrock) no it is not normal if you were playing on java tho it would be
