We would suggest staying nerby lake pichola or in old city. The roads there are very narrow, take walk or you can rent bikes. Visit City palace and enjoy sunset at cafes/hotels in lake pichola, enjoy traditional food and also explore some local street food and sweet shops. There are many temples you can visit in udaipur. Petrol easily available anywhere, south north west and low maintenance. Our last south trip was with hundai Verena diesel and in the night it's very difficult to find the diesel, those are nightmares on the road.
