For 'Really hot' I used 375 F. For 'Low heat' used 175 F. Is that ok ? Seemed to work. We did not get sick - so far. Thanks so much for this video ! Gave me the courage to cook my first chicken breast. We are way over 50. Hard to get enough protein daily. This will help a lot.

A few points: It can’t be any citrus, it has to be very acidic citrus. As well, the reason ceviche becomes safe to eat is using high grade and fresh fish and putting it in an environment where bacteria struggle to survive, like with lime or lemon juice. To add, when it changes color it is not cooking because it is not cooked fish, but the protein in the fish is denaturing.

That ceviche's lacking the sweet corn and cancha (toasted corn for crunchiness). My personal touch's a shot of Pisco mosto verde. The most aromatic kind of the peruvian liqueur.

Goodness gracious the amount of people here making fun of how little seasoning that is. This is BASIC chicken breast where you can do ANYTHING you want after. I plan on cooking chicken like this, then creating a reduction to make a good sauce to go with the chicken. If that's the case, then it would be ridiculous if I went crazy seasoning the chicken only to add it to already seasoned sauce. The funny thing is, for all the people thinking they're better chefs just because they throw more seasoning on chicken, they likely don't understand the concepts I just mentioned above.

Thank you for this video! I'm going to re-invent it to a T1 Friendy type tomorrow not sure how it's going to turn out the first time but I'm sure I will get it better in time! looking forward to trying it out but I'm going for a Cinnamon type though I'm not a fan of Cinnamon it's supposed to be good for Diabetics! Tip: Apply the salt and pepper BEFORE you stick the chicken breasts in the pan. That way you'll avoid all that hot oil splashing all over your forearms. Ouch!

All the people commenting about seasoning don't even know what seasoning is. Hyper processed powder from a plastic bottle is not seasoning.
