Yeah! So I keep mine in the fridge when I’m not baking and refresh it every 1-3 weeks. If it’s been in the fridge for a minute, I take it out a day or two before I bake again and feed it a couple times before baking so it gets nice and strong! If it’s left on the counter, I feed it once a day for best results. Hope this helps!

After you refrigerate, do you let the dough come to room temp before you bake, or do you just put it straight into the oven and add more time to bake?

I put it straight in. The bake time in the recipe is for the cold loaf. Putting it in cold actually helps it rise when met with the hot temperature. Hope that helps!

Thank you for a more simple procedure! I’m about to bake my very first loaf of sourdough. I’ve baked bread many times but, never sourdough. I’ve watched many videos that in my opinion made it more difficult to follow. Your video is perfect for me and relieved me of a lot of stress! 😅 Love the way you gave instructions as well. ☺️

Certain Dutch ovens cannot be put in the oven without anything inside, they risk breaking. When heating them, they must be put in the oven with some water inside.

If your dough wasn’t going to possibly overflow that evening, what would you have done differently? Would you have let it continue to rise on the counter and shaped it in the morning?

Oh good question! So… in hindsight, shaping it that night would’ve been the best thing to do either way. 12 hrs is a good amount of time on the counter and probably any longer and it might’ve over-proved possibly resulting in flat dough.

I use bread flour in my starter because it has a higher protein content than AP flour. I have not mastered the WW starter yet so I just keep it bread flour for now.

@@cochranhomeandkitchenit worked! I used 25 gm of my regular starter then added 50 grams of filtered water and 50 grams of whole wheat flour to make the WW starter 👍. When you mill your whole wheat flour what wheat berries do you use?

You used hard red wheat berries, what do you think woukd be the difference if using hard white? I really appreciate your easy clear explination. I just milled fir the first time today. Followed someone else's recipe before finding yours & the dough just didn’t come together. I've been making sourdough bread but this was my first time to use FMF. I don't know what happened. I plan on trying your recipe. Thank you!

I do think there is a learning curve with freshly milled flour so if you are able to try this method, I hope it’s helpful for you! I have made one loaf with hard white wheat before and I think it is mostly a difference in the flavor. I know hard wheat is needed for yeast breads (either wild yeast or commercial yeast) but the red is “nuttier” and the white is a more neutral flavor. Hopefully that makes sense! I haven’t played too much with the hard white.

Ok, thanks so much for this video! I just started my sourdough AND fresh mill journey around Sept of last year. I’m still trying to find “my way” of doing it and keep watching videos, reading blogs and trying new things. But, the sourdough/100% fresh mill videos are extremely rare, people typically claim so in title, then they add bread flour in, and it’s such a bummer! So, thank you! I also would like to try glass bread pans, just curious what size yours are? I really want to try following your method and see what else I learn! I already learned from you that I should do a longer autolyse, so I’m itching to bake another loaf (even though there’s a fresh one on the counter 😅) Thanks again! 🍞💛

For sure! I can’t believe I left this out of the description. WW Sourdough Recipe: Ingredients: 250 gm starter 700 gm water 900 gm ww flour 90 gm honey 24 gm of salt Directions: - Mix starter into water - Add in flour and mix till combined - Let rest 15 minutes up to an hour - Add salt and then add 50 gm of water to help incorporate the salt. If dough is too tight, you can add more water - Let rest 30 minutes - For the next 2 hours, every 30 minutes, fold dough on a quarter (fold dough, turn bowl a quarter turn, fold again until you have completed a full turn of the bowl) - Let rise for an additional 5 hrs (or 8 hours total from start of bulk fermentation) - Fold dough out onto counter, split in half and form 2 boules. - Let rest 20 minutes - Form boule again and place in loaf pan with parchment paper. - Place in fridge over night or at least 6-8 hours. - Preheat oven to 500 with a pan of water in the bottom of the oven. - Place loaf in oven and immediately reduce heat to 450. - Bake for 25-35 until crust is golden brown. - Let rest for 30 minutes to finish cooking *before* cutting into it.

You are the only person that I have found who has milled their own flour and made a respectable sourdough loaf. Most people use oil and lecithin and honey or sugar to try to make it soft, egg, and extra wheat gluten to try to get it to rise, vitamin C to help preserve it. it is very difficult to make a regular sourdough out of freshly milled flour. Thank you for the video.

I agree. I just started milling and I've only used flour, water, yeast, and salt to make bread. I couldn't believe all the recipes that call for all these Add'in's. It's wild.

A few questions: At the beginning of the video you point out some grains that you removed prior to grinding the grain. What was it you removed? Why? How'd you remove the unwanted grains? Beautiful loaves! I'm inspired by your video! Gene

Thank you for the compliment! What I removed at the beginning were some wheat berries that still had the husk on them. I honestly don’t know if it matters to sift them, it’s just something I do. And all I do for that is pour out a very little bit at a time and simply pick out the husked ones that I see. And any other little impurities that can sometimes be in there too. Hope that helps!

FANTASTIC LOAVES. I like the tins and Beautiful score done. YES. Looking forward to trying recipe. I will have adjustments: Mix in a mixer. will add honey and oil. Will let rise in antique tins. till it comes to the top. Will bake 400 degrees. 30 -35 minutes. Your loaves look SUPER. I will see what happens. Like to try my method. I do not like HOLES in my bread...stretch and fold encourgaes that, I do not like a HARD Crust...high temps encourages Hard crust. This is my OLD FASHIONED METHOD that works well for me. Forgot I will have the l hour first rise. Then shape and rise to top of tins. Aria

I used to get my wheat berries from Azure standard until I had huge bags of grain come to me “dirty “like yours is, super full of chaff, berries in husks and stalk pieces. Takes way too long to pick through them to me and makes it not worth it when you have large quantities of grain that you’re picking through and discarding a lot of. I’ve gone with other companies since and it is rare that you even get any berries still inside their husk. No stalk or chaff. Been awesome.
