Here's a unique recipe for Bengali Kachkolar Kofta, which uses raw bananas (kachkola) as the main ingredient: ### Bengali Kachkolar Kofta Recipe #### Ingredients: - 2 raw bananas (kachkola), peeled and grated - 1/2 cup besan (gram flour) - 1/2 teaspoon turmeric powder - 1/2 teaspoon red chili powder - Salt to taste - Oil for frying #### For the gravy: - 2 onions, finely chopped - 2 tomatoes, pureed - 1 tablespoon ginger-garlic paste - 1/2 teaspoon cumin seeds - 1/2 teaspoon turmeric powder - 1/2 teaspoon red chili powder - 1 teaspoon coriander powder - 1/2 teaspoon garam masala powder - Salt to taste - Fresh coriander leaves for garnish - Oil for cooking #### Instructions: 1. **Prepare the Koftas:** - Grate the raw bananas into a bowl. - Add besan, turmeric powder, red chili powder, and salt to the grated bananas. - Mix well to form a dough-like consistency. If the mixture is too wet, add more besan. - Shape the mixture into small balls or oval-shaped koftas. 2. **Fry the Koftas:** - Heat oil in a pan over medium heat. - Fry the koftas in batches until they are golden brown and crispy on the outside. - Remove them onto a plate lined with paper towels to absorb excess oil. Set aside. 3. **Prepare the Gravy:** - In another pan, heat oil over medium heat. - Add cumin seeds and let them splutter. - Add chopped onions and sauté until they turn golden brown. - Add ginger-garlic paste and sauté for another minute until the raw smell goes away. - Add turmeric powder, red chili powder, coriander powder, and salt. Sauté for a minute. - Add tomato puree and cook until the oil starts to separate from the masala. 4. **Assemble:** - Once the gravy is cooked and oil separates, add water to achieve the desired consistency. - Bring the gravy to a boil and then reduce the heat to low. - Gently drop the fried koftas into the gravy. - Simmer for 5-7 minutes, allowing the koftas to absorb the flavors of the gravy. 5. **Serve:** - Garnish with fresh coriander leaves. - Serve hot with steamed rice or Indian bread (roti, naan).
