The main reason not to touch a prop that's not yours is to ensure that prop is Always where the actor will find it Every Time. If someone decides to pick up that knife and doesn't put it back exactly where it was, it can throw off an entire performance when the actor loses focus trying to find it.

Someone stole the dough i was using as mrs lovett, just ambiently kneading. It took a few days to get more dough for some reason, so several tech rehearsals were entirely pantomime 😂
