Brisket is literally not hard. Dry brine with rub and salt for 24 hours(helps your bark set up nicely) Smoke at 225-250 for 2 hours then start spritzing brisket with water,soda,apple juice every 30 min after especially around the edges to keep from drying out Continue smoking until internal temp reaches 165. Remove brisket and wrap in butcher paper(wet butcher paper with tallow, or whatever you spritz brisket with) put butter underneath brisket and on top. Return to smoker with fat side up and smoke at 285-300 to help brisket through stall Continue smoking brisket until internal temp reaches 203 Remove brisket from smoker and cut open butcher paper Place exposed brisket in a room temp cooler(lid closed)for at least 2 hours. Slice and enjoy Side note, you can also put brisket in the oven fat side up after you wrap it for temp consistency and if you need a break from tending the fire.

I moved here from san diego, and it is not ghetto at all, nor scary. Granted I was raised in the not so best part of san diego “barrio logan” seeing murders, losing family members, and dealing with non stop drug addicts. San jose is so nice, no homeless problems, no issues.

Pleasure juices in Santa Cruz has some yummy paletas and a 420 açaí bowl that’s like sorbet I highly recommend. They also have a taco truck outside with some scrumptious tortas
