I never seen this video. I have a whole new respect for Hiroyuki Kayama. He seems like a very sincere person and would love to have a conversation with him regarding his methods. I don't drink anymore for health reasons but if I had a chance I would try some of his recipes... Thanks for this! Edited for spelling.

I think he may have made this one up on the spot, or at least the name. Carefully follow the video and you could probably figure it out. Pretty sure they showed all the ingredients.

I am a regular customer for Kayama-san at both this and his smaller (technically larger) sister bar B&F right downstairs (2F). This man is one of my best friends here and he is such a wonderful bartender and a great source of inspiration. He has his own farm and raises his own ingredients as well. I've never had a 'bad' drink at his bar. I've said "surprise me" on many occasions and it has always done that in spades.
