The food, the front of the house, the financial numbers, all of the above. You can see it all over her face that she doesn't know anything and doesn't really care to make an effort to learn about the business she and her husband put a minimum of 1.5 million dollars into. My advice, if you don't care or have given up, shut the business down and lock the doors or sell it to someone else who actually gives a damn and will run it better.

i had made this comment somewhere else on some other video i think, but this is important old people have high standart for how rooms look, but extremely low standarts for how dishes look. my grandma used to work in restaurants during the commie regime, but all her dishes and tools are dirty and sticky with burnt in dust, i have to constantly clean for her her food is tasty tho
