Madam thank you for the recipe. I only wish to point out that onion seeds are Alium cepa, not Nigella sativa. Nigella sativa may look the same but it is a completely different thing with different properties from onion seeds. Which do we add in the oil?

Sorrel leaves or gongura in india are not used in the Caribbean. The flowers and fruits are picked and used for making a drink at Christmas time. The fruits are dried in Jamaica and can make a drink. It is called hibiscus

I make garlic, ginger and garlic/ginger paste which lasts for over a year. You need not add any thing but only pasteurise the paste and sealing the hot paste in sterilized jam bottles. You may add 1 gm of sodium benzoate to one Kg. Paste.

Tip: If you're lazy, using oil is enough to preserve the paste for a few weeks, salt is useful too.
