Herring is not raw, but fermented. It is a very old technique, in which the raw herring going to be gekaakt first. This a Dutch verb, don’t know if there is a translation. After kaken it is put in a cask with salty water, together with the herring’s own juices it is fermented. Sounds not tasty, but when done right, it is a delicacy. Don’t know why the world, except Dutch people, thinks it is raw, it isn’t. How can you store raw fish for that long? Good herring is eaten without pickles or onion. Add ons are just to mask bad herring, it’s a very old selling trick, probably originating in Amsterdam, from the time before refrigerators. Smell the fish store carefully. If it smells like bad frying oil or smells too much like fish, don’t buy there. Frequently encountered in Amsterdam. Tourists don’t know. Informed Dutch people don’t buy herring in Amsterdam. Good herring is just eaten like that, nothing else extra needed. You grap it by the tail and look at the sky, lower it in your mouth, take a bite. If you taste something sharply bitter, it means they didn’t clean it well, you are eating the herring’s reproduction organ.
