@@beepybloops You’re hearing three things: the opening sequence which is transposed throughout, the microcosm (the whooshing sound), and my soloing over the sequencer an octave higher in the second half.

Back in 2008/09ish I was working under a chef who used this exact same recipe in his South OC location and they would charge like $50 for the dish, around April I was looking for fresh start at a new restaurant, I was hired as a sour chef at a place that had only been open for about a year, and served the exact same roasted chicken recipe. At this location they only charged $24, no difference, same chicken size, same food vendor (US Foods), same basic recipe. tasted exactly the same and final result was exactly the same, that's when I stop going to high end locations thinking I was getting something amazing or different. you can make this same thing at home for 7 bucks and get the exact same outcome and won't have to pay $50 at the French Laundry for it.

I was nowhere near either his skill or (former) position in the restaurant industry, but this is exactly how I used knives in the Bay Area and the Seattle area for fifteen years. Also, no one has to use expensive knives. If you want to use less costly knives, keep them sharp and take care of them well, and they'll last decades. My preferred blades are medium-grade from Mercer.
