Thanks for the video. The general rule of thumb is that 1 packet of yeast (approximately 2.5 teaspoon) is enough for 4 cups of flour. How are you using less yeast and more flower? Have you noticed that it’s possible to do this way, or was this an error

To my fellow bakers: KZbin videos are a showcase of one's achievements. They are not instructional videos. This is a great example of omitting some KEY TIPs that makes him achieve the air bubbles. One can follow the "directions" implicitly and achieve the same dense, 1 ton, whole wheat loaf. No where does he explain how to achieve such an airy-ideal loaf, even with his skipping the 2nd hour of proofing. Great calming voice and presentation, and thanks for sharing what gear you used to film this. Good luck!

Not sure if this has been asked yet,but would I be able to just take off the lid the last 5 min. instead of taking it out of the oven and removing the parchment paper?

Great question! My parchment paper is rated safe up to 425°F, so to be on the safe side, I take it out during the last 5 minutes with the lid off, especially since I have a gas stove. If your parchment paper is safe at 450°F, you should be fine leave it in, but removing it is always a safe bet. Hope that helps!

I left in for about 8min. to get the outside a little darker but I have to say that this is the best bread recipe I ever tried and did not fail with. I have a 6 quart dutch oven and this came out amazing! Thank You!

One thing I’ve discovered in my experience with various recipes for “dutch oven” bread, is that baking bread isn’t really very fussy. It’s almost hard to do it wrong. This recipe is at the fussy end of the scale. I’ve had results that look just like this loaf using recipes that are basically just mix, let rise, bake, done.

Didn't work with only 3 cups of flour (all purpose). The mixture was too liquidy. I am adding about one more cup of flour and hoping the consistency is good enough to work.

I’ve made this twice and it’s turned out great. It lighter than other ones of made and more air holes in the bread. My only issue is, when I bake it it looks white after 35 minutes and not brown at all? Once I remove the lid it browns up but not sure why mine isn’t coming out looking brown? I’m using the Dutch oven as well.

Hi, Thanks for this simple recipe. You are working with nearly 100% hydrated dough. It is usually very srticky with so much water. Yours does not appear very sticky. What is your secret? How strong is your flour? It says "all purpose", but it appears to be of much better grade. Right? Thanks again.

I know this an old video but so glad to have found this one. I’m new at bread, so my wife bought a loaf of artisan bread from a neighbor and it’s was awesome! I liked it so much that I had to make some. So I started searching , tried many, tossed a few and some ok but not real good. Came across your video and bam! The best artisan bread ever! Even better than the neighbors loaf. I can’t stop making it! I make probably two loafs a week and we love it! Butter and jam 😋. Made some for my mother in law true Irish, and she loved it! Thanks for the video my search is over and the more I make it the better it gets ! You know no one is a bread maker there first day! But after a couple of loafs you learn little things each time. So if you’re new at this just keep trying and tweaking and eventually you’ll have awesome bread for you and your family! Love the recipe! Thank you for sharing! Keep making your own food it’s much better than store bought! Happy baking everyone.

Sorry to hear. Try adding more flour when shaping the dough. If it's super sticky, you can try stretching and folding it a few more times. Hope that helps.

Every oven is different. I take out the dutch oven once the temperature reaches 450°f. Which is around 10 minutes.

FYI, I bake a lot and usually have all the ingredients required for baking most things on hand so, I baked this bread just now but I used equal quantity of all purpose flour and bread flour. All other ingredients & quantities remained the same . It turned out perfect. Oh and one other thing....I baked it at 450 degrees for 45 minutes with the lid on the dutch oven and at the end of that time the bread was perfectly golden brown on top and didn't need any more time in the oven.
