I passed my GPU (AMD RX580) and saw it successfully recognized in the Windows 10 device manager. However when I shut it down to remove the spice graphics, channel and video from the hardware list, I can't launch it in the console with error "Graphical console not configured for guest". Any idea why?

One big important thing about GPU passthrough !!! If while booting macos the screen freezes at different parts of the loading proccess like it happened with my RX 580 than you need to disable in the host system bios the resize bar (4G decoding) or SAM option because macos doesn't support that yet. On my Asrock x670e motherboard bios the option is in Advanced>PCI Configuration. This option is enabled by default on modern motherbords and needs to be disable.

hey I know I'm late but I need help I want to use proxmox for macos hackintosh. I only want it to use as my main os. Like mac os is going to be the only vm and the main one as if it wasn't a vm in the first place. I want it to use all pc resources. but I cant seem to find a tutorial that explains how to make one your main os vm if that makes any sense. if someone can recommend a yt tutorial for me to follow that would be great.

hahahaha I love your definition of Micro$oft: Bloatware, Malware, Spyware > Big Corporate Bloatware :) So true... It is annoying because I need Windoze and it would be so easy for Micro$oft to actually make a decent "clean" OS if they put their efforts into it, which would be terrible for Linux... The Windoze Registry is one of the most terrible thing ever created. Always leaving orphan crumbs all over the places... Terrible.

What a hassle... Why not just install Windows with dual boot Linux? Anyway with only 1 GPU, you can't run both at the same time... Makes no sense to go through all these steps just to have Windows that would hopefully be as fast as possible. However, thank you for the detailed steps :)
