Wet brine? What kind of dump ish is this. Is Dry brine just seasoning?
@learntobbq19 күн бұрын
Nothing wrong with a Dry Brine. i do both. If I have a frozen turkey and need to make sure it is totally defrosted I will do a Wet Brine. If I have a fresh unfrozen turkey or chicken I will do a Dry Brine.
@HammBone95018 күн бұрын
@ Dry Brine? Are you from India? Never in my life have I ever heard dry brine. Brine needs water added. So dry brine doesn’t exist it would just be seasoning. I think you need to “learntobbq” yourself.

I have the Sportman Series 7, my only complaint is the ability to hold low temps, anything at 225 or lower gives me a big temp swing, it goes from 180 to 265 back and forth all the time. Cooking higher than that and it holds the temp like a champ.
@learntobbqАй бұрын
I have not had that issue with mine but I have had other pellet grills that wander at low temps. The way I would fix them is by adding mass to the chamber. A large water tray or even a large cast iron pan would even out the spikes. I would also give Pit Boss customer service a call for there maybe a app or firmware update that might help.
@22873Ай бұрын
@@learntobbq Thank you for the advice. I tried a lot of things including what you mentioned and still have the same issue, will definitely call Pit Boss.

I have one and it’s been nothing but junk. Still under warranty and PitBoss has been good with sending parts under warranty but guess what? A smoker fails when you have a group of people expecting to eat dinner. Three times this summer I’ve had to apologize to my friends and family and order pizza. One more failure and mine is going to the junkyard.

Here is my Trifecta - Pit Boss Sportsman 1600 Pellet Grill, Pit Boss Sportsman Series 7 Verical Smoker and Pit Boss Ultimate Griddle - 4 burner. Yesterday I did a Mock Thanksgiving Dinner for a future video. Cooked the Spatchcock Turkey on the Pellet Grill and did the Mashed Potatos, Acorn Squash and Mexican Corn Casserole on the Vertical Smoker. Grilling is not BBQ. BBQ is low & slow cooking. Grilling is not low and slow.
@learntobbqАй бұрын
While technically correct, the term 'grill' has evolved to encompass low-and-slow cooking, especially with the rise of multi-functional cookers like pellet grills. So, yes, you can barbecue on a pellet grill.

I have one also. The temp would be all over the place. I replaced the control panel and it now holds a +/- 10 degrees no matter the temp setting. But WHY do they put the control panel at the bottom? Having drippings from meat drop on the control panel is what I believe caused my problem
@learntobbqАй бұрын
I know in the pro line they moved the control panel over to a table on the side of the smoker. I know it requires a lot of cleaning but that seems to be the case with almost all smokers.
@David-qr8piАй бұрын
@@learntobbq True that. I try to be really careful now and keep my panel clean while cooking. They obviously did not consult a “backyard “ pit master when they came out with their initial models.

I am in the process of dealing with pit boss customer service and I am frustrated with their handling of my situation. I have a Titan that the temperature increases about 1 degree per minute on average after meeting setpoint and it will not stop until you turn the pit off. In smoke mode it works fine and that is how I am using it. Been troubleshooting it by taking pictures and posting to their service area. Been on the phone with them in control of my camera on the phone so they can see the control issue. Had it set at 250. At 330 it sent them pics of the difference and the temp ramp rate from the app. The guy was convinced that the controller was the issue but he had to make me change out the pellets before he could proceed. Needless to say I had no new pellets in my possession even though the ones in there were only 3 days old. I lost it at that point because we both knew there was no magic pellet that could tell the computer to stop turning the auger to feed pellets when you are 100degrees over setpoint already. Now I have to wait for another day to call them when the pit is cold and I have a new bag of Pitt Boss pellets to continue trouble shooting my controller issue. I was working graveyards and my only intent on calling was to figure out when they were going to get in touch with me about the issue. Had no intention of doing trouble shooting to the extent of laying on the ground, opening panels, taking pics of wires, getting shocked in the process…. Will be glad when this is over.
@learntobbq2 ай бұрын
I'm sorry this is happening to you. It sounds like a controller issue, but having bad pellets can mess up the PID controller, and until you get new pellets, it is hard to determine the failure. If you have new pellets and still have the slow runaway temperature issue, then the controller needs to be replaced. Changing pellets is a lot easier than replacing a controller. Good luck.

I was hoping to see something more for the common person, these kitchens probably cost more than a lot of peoples houses, I'm planning an outdoor kitchen patterned after the old smoke shacks with plywood windows that open with bar stools that you see selling BBQ along the road, mine should hold my smoker, BBQ grill and flat top. We will see if it happens.

You are right. This video features high-end outdoor kitchens. Personally, I prefer more practical kitchens that are based more on function than style. I am redoing my outdoor kitchen at our new house and already have the pellet grill, vertical smoker, and griddle, so I am not doing built-ins. In the future, I will do a video on this outdoor kitchen.

The steaks that they sent me were way too thin. I love the ties to the USA but the steaks aren't worth the money. Better steaks can be had at Harris Teeter, Whole Foods and most times at Food Lion. I wish you all the best. Support a local butcher if you can and enjoy your day.

@@learntobbq No worries at all. I utilize a local butcher now and have been really satisfied on the quality. I'd not dissuade anyone from ordering from them. I just won't order again as I like steaks about 1.5" thick. The steaks ordered came in about 3/4", looking like a waffle house steak. I love a cheap, WH steak but that's not what I ordered. I wish them the best but I was just not at all impressed. Either way, I thank you for the time you took from your day to respond. I hope you're having a wonderful day. Lord's blessings, My Friend.

I was just reminded why it is very important to add 16 oz water to the pan (in my case, Claudes Brisket Marinate) when it has been in the final stage of 150F for at least 10 hours. i live at 7,400 feet in the mountains. Water boils at 198 degrees F. That means you will lose all the moisture in the brisket if you are trying to get to 203F without foiling. This is why I always foil when I get to 190F or below to avoid turning my brisket into beef jerky. This is also the reason why when resting the brisket at 150F for at least 10 hours, you do not have to worry about a dry brisket.
